		<description>The original recipe calls for smoked salmon - I found this a bit too intense so used just 6-8 ounces of smoked salmon with the fresh - the resulting hint of smoke enhanced rather than smothered the chowder. 

Last batch I used the strained juice of a monster can of clams (51oz. Costco buy)and added half the can of clams with the salmon, whiskey etc.  Extra yum!

I also double the amount of fennel now - just 1/2 cup was lost amongst all the other wonderful flavours.</description>

		<description>I love this one.  Simple, always moist, basically foolproof.  If using king salmon, cut a little thinner and add a little more time to compensate for the difference in size over sockeye.</description>

		<description>ORANGE-MISO dipping sauce

1 tablespoon white miso paste
2/3 cup sour cream
1/2 cup mayonnaise
1 tablespoon grated lemon zest
2 tablespoons freshly squeezed lemon juice
1 tablespoon orange zest
1 tablespoon orange juice
salt and freshly ground black pepper

Mix all the ingredients in a bowl until smooth.  Season with salt and pepper to taste, and chill until ready to serve.</description>
